Organic Kohl rabi - cabbage turnip

Kohl Rabi

The name is of German origin and means cabbage-turnip.
Kohl Rabi is part of the cabbage family first grown in Europe around 1500. It has a turnip-like appearance with leaves standing out like spokes from the edible portion which is a rounded enlarged stem section growing just above the soil line. Looks very space age like a sputnik
This vegetable is best eaten when small up to 3″ in diameter.  After that they begin to develop woody fibres.  Firm and creamy, the white flesh offers a very agreeable and delicate mustardy flavour.  Treat it like a root vegetable which can be eaten raw or cooked, steamed or stir fried
This unusual vegetable is not widely available here, and few appear in the boxes November/December
Kohl Rabi is a good source of Vitamin C and potassium, high in fibre and  low in calories.
